Rao Jodha founded Jodhpur in 1459, and the huge Mehrangarh Fort still stands on a rocky ridge above the old city, its walls and palaces holding museums of arms, palanquins and painted rooms. Below, thousands of cube-shaped houses are washed in blue, a colour said to have started with the Brahmin families who lived there. White marble Jaswant Thada, a memorial to a maharaja, lies close to the fort.
The Clock Tower and Sardar Market form the centre of the old city, with spice, textile and silver stalls. Umaid Bhawan Palace, completed in the 1940s, is part royal home, part museum and part hotel. Mandore Gardens, the former capital, has cenotaphs and temples, and the Bishnoi villages to the south are known for their protection of wildlife. The temples and dunes of Osian lie about an hour to the north.
Mirchi bada, a green chilli stuffed with spiced potato and fried in gram-flour batter, is a street classic here, along with pyaaz kachori and makhaniya lassi, a saffron-scented lassi. Dal baati churma and laal maas, a fiery red mutton curry, are Rajasthani staples. May and June bring dry heat of over forty degrees.
