Göreme's houses and hotels are carved into soft volcanic rock, and the town is ringed by valleys of cone-shaped fairy chimneys shaped by erosion. The Göreme Open-Air Museum gathers rock-cut monasteries and churches whose frescoes, painted by Byzantine monks, still glow with colour, especially in the Dark Church.
At sunrise, scores of hot-air balloons rise over the valleys in one of Turkey's most famous sights. Walking or riding through the Rose, Red, Love and Pigeon valleys reveals hidden chapels and dovecotes. Nearby, the rock citadel of Uçhisar gives sweeping views, the mushroom-shaped chimneys of Paşabağı stand in clusters, and the underground cities of Derinkuyu and Kaymaklı descend several levels into the earth.
Local cooking includes testi kebab, slow-cooked in a sealed clay pot that is cracked open at the table, along with gözleme and wines from the region's vineyards. The valleys look their best in the mild days of spring and autumn; summer days are hot and dry, and winter can dust the fairy chimneys with snow. Avanos, on the Kızılırmak River, is known for its pottery.
