Ürgüp lies in Nevşehir Province in the middle of Cappadocia, a plateau where volcanic ash settled into soft tuff that wind and water have worn into spires, cones and ridges known as fairy chimneys. Houses, stables and churches have been cut straight into the rock here for centuries, and some of the town's old cave dwellings are now guesthouses. Narrow streets of stone houses climb the hillside above the main square.

The Göreme Open-Air Museum, a valley of rock-cut monasteries and churches with Byzantine frescoes, is a short drive away, as are Uçhisar's rock citadel and the pottery town of Avanos, where clay from the Kızılırmak River is turned on wheels. Underground cities such as Derinkuyu extend deep below the plain. At dawn, balloons float over the Love, Rose and Devrent valleys, with their strange rock shapes.

Testi kebab, meat and vegetables baked in a sealed clay jar that is broken open at the table, is the signature dish, with manti, small dumplings with yoghurt, and gözleme, filled flatbread. The region is also known for its wines: grapes such as Emir grow in the volcanic soil. Snow dusts the rock formations in winter.
