Uçhisar stands in the middle of Cappadocia in central Turkey, around a huge natural rock pierced with rooms, tunnels and windows, one of the highest viewpoints in the region. The rock, a citadel carved from soft volcanic tuff, can be climbed for a panorama over the villages and valleys around. The village below has stone houses on steep lanes, many of them converted to hotels and cafés.
The valleys around Uçhisar are full of soft stone shaped into pinnacles called fairy chimneys, pigeon houses cut into the cliffs, and trails. Pigeon Valley leads down towards Göreme, where the Open Air Museum has rock-cut churches with frescoes. Hot-air balloons rise over the valleys at dawn. Other sights include the underground cities of Derinkuyu and Kaymaklı, built to shelter people, and the pottery town of Avanos.
Testi kebab, meat and vegetables cooked in a sealed clay pot that is broken open at the table, is the local dish, with manti, tiny dumplings, gözleme flatbreads and Cappadocian wines such as Emir. Tea comes in tulip glasses. Winters are cold, and snow sometimes frosts the rock formations.
