Ibiza Town's old quarter, Dalt Vila, climbs inside a ring of Renaissance walls and is listed by UNESCO, with a hilltop cathedral and lanes of whitewashed houses. The harbour below holds the fishermen's quarter of Sa Penya and the marina. Founded by Phoenician settlers, the island has long been a stopover for sailors, and the hippy colony of the 1960s still shapes its market and craft culture.
Away from the clubs, Ibiza is a rural island of terraced fields, pine woods and fortified white churches, and its coves such as Cala Salada, Cala d'Hort and Cala Comte are known for clear water and sunsets. The rock of Es Vedrà stands off the south-west coast, and the Ses Salines natural park has salt pans and long beaches. Formentera is a short ferry ride south, and the village of Sant Carles has a market.
Bullit de peix, a fish stew with rice served separately, sofrit pagès, a country stew of lamb and sausage, and flaó, a cheese and mint tart, are traditional island dishes. Hierbas ibicencas, a herbal liqueur, closes the meal. Almond trees blossom in January and February, long before the summer crowds.
