Cádiz was founded by Phoenician traders about three thousand years ago as Gadir and still stands on a slim spit of land almost surrounded by the Atlantic. The old town is a grid of narrow lanes, plazas and watchtowers. The cathedral, with its golden dome, stands by the sea, the Torre Tavira holds a camera obscura that projects the city, and a Roman theatre was uncovered beneath the old quarter. A monument in Plaza de España commemorates the liberal constitution drafted here in 1812.
La Caleta, a small beach between two castles, is the best loved in the city, and Genovés Park is a shady garden by the sea. Cádiz holds a famous carnival, with satirical songs, in the weeks before Lent. Across the bay lies El Puerto de Santa María, which forms the sherry triangle with Jerez de la Frontera and Sanlúcar de Barrameda, and the white villages, such as Vejer, rise to the south-east. The beaches of the Costa de la Luz stretch south towards Tarifa.
Pescaíto frito, assorted fried fish, tortillitas de camarones, crisp shrimp fritters, and bluefin tuna caught in traditional traps called almadrabas, are the local specialities. Sherry and manzanilla are poured beside them, and the levante, a strong easterly wind, can blow for days.
