Saint-Émilion climbs a limestone hillside in the Gironde, in the heart of one of France's most celebrated wine regions, and is named after a Breton monk who settled in a cave here in the eighth century. The town and its surrounding vineyards form a World Heritage landscape, and steep cobbled lanes link small squares and honey-coloured stone houses.

The monolithic church was carved out of the rock by monks, and the bell tower above it, with views over the roofs and vines, can be climbed. Underground, galleries and cellars cut into the limestone are used for ageing wine. Remains of the ramparts and the Tour du Roy keep watch over the town, and the ruined cloister of the Cordeliers lies among its lanes.

Wines here are mostly merlot-based reds, and cellar doors in the surrounding villages and châteaux open for tastings. Almond macarons, soft biscuits made to an old convent recipe, are the town's own sweet, and canelés from Bordeaux, which lies a short way to the west, appear in its bakeries. The vines turn gold after the harvest in autumn.
