Valladolid stands in the east of Yucatán state, founded by the Spanish in the 1540s on the site of a Maya settlement. Its central plaza is flanked by the church of San Servacio and the arcaded town hall, with pastel colonial buildings around it. A short walk away, the Convent of San Bernardino de Siena, built in the 1550s, has a large walled courtyard and a fortress-like church.
In the town itself, the Zací cenote is a large sinkhole under a vaulted limestone roof, and Cenote Dzitnup, a few kilometres west, glows with a shaft of light. Chichén Itzá, the great Maya city with its stepped pyramid El Castillo, lies some 40 km west, and Ek Balam, with its tall acropolis and stucco carvings, is to the north. The pink lagoons of Las Coloradas and the flamingos of Río Lagartos are a longer trip north.
Yucatecan cooking centres on cochinita pibil, pork marinated in achiote and sour orange and slow-roasted, with sopa de lima, panuchos and longaniza de Valladolid, a spiced smoked sausage that the town claims as its own. The air is hot all year, the dry months run from November to April and the rains come from June to October. Xtabentún, a liqueur of honey and anise, is the local drink.
