Fes el-Bali, the old medina, is a UNESCO World Heritage Site and a living medieval city where donkeys and handcarts still carry goods through narrow lanes. Its best-known gateway, the Bab Bou Jeloud with its blue and green tiles, leads into a maze of souks, fountains and old caravanserais.

The Al-Qarawiyyin, founded in the ninth century and often described as the oldest continuously operating university in the world, sits at its heart beside the shrine of Moulay Idriss II. The Bou Inania and Al-Attarine madrasas showcase carved cedar, stucco and zellige tilework, and the Chouara Tannery's dye pits make a colourful sight from the surrounding terraces. Fes el-Jdid holds the golden gates of the Royal Palace and the old Jewish quarter, the Mellah.

Fassi cooking is among Morocco's most celebrated, with pastilla, the sweet-and-savoury pie, and rich tagines. Visit in spring or autumn for warm days and cool nights; summer is very hot, and winter cool and sometimes rainy. Meknes, the Roman ruins of Volubilis and the holy town of Moulay Idriss make rewarding day trips.
