Arequipa lies at about 2,300 metres in the dry southern Andes, with the cone of El Misti volcano rising above it and Chachani and Pichu Pichu on either side. Its centre is built from sillar, a light volcanic stone that has earned it the name of the White City. The Plaza de Armas has arcades, palms and the cathedral, whose façade stretches the full length of one side.
The Santa Catalina Monastery, a walled complex of cloisters, painted streets and gardens, is a small town of its own, closed to the outside from the sixteenth century to 1970. The Museo Santuarios Andinos displays Juanita, an Inca girl found frozen on Ampato volcano. Colca Canyon, one of the deepest in the world, lies several hours to the north-west, where condors ride the air currents at the Cruz del Cóndor viewpoint.
Rocoto relleno, a hot pepper stuffed with spiced meat and baked with cheese, is the city's best-known dish, followed by adobo, pork stewed in chicha vinegar, and chupe de camarones, a river-prawn soup. Many of these are served in picanterías, traditional lunch restaurants. The sky is clear for most of the year, and the rain falls between January and March.
