Chianti is the stretch of rolling Tuscan hills between Florence and Siena, where vineyards and olive groves cover the slopes and stone farmhouses and cypresses stand along the ridges. Its heart is the area of Chianti Classico, marked by a black rooster emblem, with towns such as Greve, Radda, Gaiole and Castellina. The wine is made mainly from the Sangiovese grape, and many estates have cellars where it can be tasted.
Greve has a triangular market square, Radda and Castellina keep stretches of medieval wall, and castles such as Brolio and Verrazzano and the abbey of Coltibuono stand among the vines. The old road through the region, the Chiantigiana, winds between Florence and Siena, and Panzano and Montefioralle are small villages with views. Florence is about thirty kilometres north, and San Gimignano and Monteriggioni are an easy drive west.
Ribollita, a thick soup of bread, beans and kale, is the staple of Tuscan kitchens here, alongside pappa al pomodoro, finocchiona, a salami flavoured with fennel, and the thick bistecca alla fiorentina grilled over coals. Pecorino cheese, olive oil and vin santo with almond biscuits complete a meal. The grape harvest in September and October colours the hills, and spring is green.
