Alberobello is a town of trulli, round dry-stone houses with conical grey roofs, built without mortar. More than a thousand of them are packed into the Rione Monti and Aia Piccola districts, which are on UNESCO's World Heritage list. Some trulli are now shops and cafés, one is a church, and the two-storey Trullo Sovrano is a small museum.
Locorotondo, a few kilometres away, is built in concentric circles on a hilltop, with white lanes, geranium-filled balconies and views over vineyards. The Itria Valley around it is dotted with trulli in fields, dry-stone walls and olive groves. Martina Franca has a baroque centre, Cisternino is known for its butchers' grills, Ostuni, the white city, crowns a hill toward the coast, and the Castellana caves lie to the north.
Orecchiette with turnip tops, burrata, a soft cheese with a cream centre, and capocollo, a cured pork cut from Martina Franca, are local staples. In Cisternino, butchers cook bombette, small pork rolls, on a grill for customers to eat on the spot. Locorotondo gives its name to a crisp white wine that suits the valley's cooking.
