Experience the best of Salta

Salta, a colonial city in a green valley of north-west Argentina, is the base for the Andean canyons, vineyards and high desert of the region.

Salta sits in the Lerma Valley at about 1,200 metres, ringed by green hills at the edge of the Andes. Its centre keeps Spanish colonial buildings around the Plaza 9 de Julio, among them a pink-fronted cathedral, the arcaded Cabildo and the Convent of San Bernardo with its carved wooden door. A cable car climbs Cerro San Bernardo for a view over the rooftops.

Beyond the city lie some of the most colourful landscapes in the country. The Quebrada de las Conchas road runs through red rock formations towards Cafayate, where vineyards grow at altitudes among the highest in the world and the white Torrontés is the signature grape. Cachi and the Calchaquí Valleys have adobe villages and cactus-covered slopes, while the Quebrada de Humahuaca in Jujuy and the Salinas Grandes salt flats make longer excursions to the north.

The empanada is the local pride, baked or fried and filled with hand-cut beef, and every family has opinions about the right way to make it. Locro, a thick stew of maize and beans, and humitas of sweet corn steamed in husks appear on cool-weather menus, and peñas, folk-music taverns, fill the evenings with guitars. The dry winter months bring clear skies.
