Soufrière is St Lucia's old French capital, founded in the eighteenth century and set on a bay under steep green peaks. The Pitons, two steep volcanic spires, Gros Piton and Petit Piton, rise straight from the sea to the south of the town and are a UNESCO World Heritage Site. Fishing boats, a waterfront and a market give the town an easy pace.

Near town, the Sulphur Springs fill a crater with bubbling mud and steaming vents, billed as a drive-in volcano, and the Diamond Botanical Gardens and Waterfall have mineral baths fed by the same volcanic source. Anse Chastanet and Anse Mamin have black volcanic sand and reefs close to shore for snorkelling, and cacao estates in the hills grow the beans for island chocolate.

Callaloo soup, grilled mahi-mahi, and green fig with saltfish are everyday meals, while cocoa tea is made from local cacao rolled into sticks and grated into hot milk. Kwéyòl, the local creole, mixes with English in the market. Rain falls mostly between June and November, and the island is at its sunniest from December to May.
