Eilat sits at the southern tip of Israel, at the head of the Gulf of Aqaba, where desert mountains of red granite drop to the Red Sea. Across the water lie the Jordanian port of Aqaba and the coast of Egypt. The city was founded in 1949 and grew from a port into a resort of hotels, a lagoon-side promenade and a long beachfront.

Coral Beach Nature Reserve and the Underwater Observatory show the reef, its fish and sea turtles, with snorkelling and diving from the shore, and a dolphin reef lies south of town. Inland, Timna Park holds ancient copper-mining sites, rock arches and sandstone pillars, and the Red Canyon and the Eilat Mountains offer desert hikes. The Negev stretches north, and Petra lies in Jordan beyond Aqaba.

Grilled fish, hummus, falafel, shakshuka and chopped salad make up the local table, with dates grown in the Arava valley. Sunshine is dependable, winter days are warm and pleasant for walking, and summer is intensely hot, with desert dryness taking the edge off the humidity.
