Tashkent has been a trading city on the Silk Road for over two thousand years, but a major earthquake in 1966 destroyed much of it, and the modern capital was rebuilt with broad avenues, big squares and Soviet-era buildings. The old city, Eski Shahar, survives in pockets, with narrow lanes and mud-brick houses. The Khast Imam complex has madrasas and mosques, and its library holds the Uthman Quran, one of the oldest copies of the Quran.
Chorsu Bazaar, under a huge blue dome, sells spices, dried fruit, bread and nuts. Kukeldash Madrasa dates from the 16th century. The metro, opened in the 1970s, has stations decorated like palaces, with chandeliers, mosaics and carved marble. Amir Timur Square, the Navoi Opera and Ballet Theatre and the State Museum of History are in the centre. The Chimgan mountains and Charvak reservoir lie about 80 kilometres north-east.
Plov, a pilaf of rice, carrots and mutton cooked in huge cauldrons, is the national dish, and the Central Asian Plov Centre is famous for its enormous pots. Samsa baked in clay ovens, lagman noodles, shashlik and round loaves of flat bread stamped with patterns are served with green tea.
