Eleuthera is a ribbon of land around 180 kilometres long but rarely more than a few kilometres wide, in the Out Islands of the Bahamas, with the Atlantic to the east and a calmer sea to the west. English settlers, the Eleutheran Adventurers, arrived in 1648 seeking religious freedom, and the island takes its name from the Greek word for freedom.
At the Glass Window Bridge the island narrows to little more than a road, with the deep blue Atlantic on one side and shallow green water on the other. Preacher's Cave, near the north, is where the first settlers sheltered. Governor's Harbour has pastel colonial houses, Gregory Town is known for its pineapples, and Harbour Island, a short boat ride off the north coast, has Dunmore Town and famous pink sand.
Conch salad, cracked conch, fresh lobster and guava duff, a steamed dessert, make up the local table, with sky juice, a mix of coconut water and gin, to drink. The dry months run from winter into spring.
