Start with an everyday serrano, your baseline, then meet the ibérico, where the breed shows itself in fat marbled through the muscle. The leap comes with acorn-fed ibérico from pigs raised in the oak woodlands on nothing but acorns, where the salt fades and the fat melts on your tongue into toasted hazelnut. Along the way you learn the art of cutting jamón, and why cava, not wine, is the ham's natural partner. Your host reads each bite for you: the breed, the acorns, the region, and the years of curing behind it. You leave able to decode any label like a local. Come hungry.
